This simple recipe is perfect for cold fall nights

Creamy and rich in flavor
Pumpkin soup stands as an enduring classic when it comes to comforting fare for the colder seasons. It's a creamy, invigorating delight, perfect for sharing with friends and family or indulging in on your own.
Here's what you'll need to make this delicious soup:
1 butternut pumpkin
2 medium potatoes
2 smaller carrots
1 onion
3 cloves of garlic
4 cups of chicken broth
Salt
Pepper
Nutmeg (optional)
Directions:
Start by preparing the vegetables - wash, clean, and peel them as needed, and then dice them.
Heat a pot with a splash of olive oil and sauté the onion until it turns translucent. To expedite this process, add a pinch of salt to the onion. After the onion reaches translucence, introduce the garlic and the carrots, cut into smaller pieces. Simmer briefly, then continue by adding the diced pumpkin and potatoes. Season with salt, pepper, and nutmeg to your taste, and cover with the chicken broth. Let it simmer over low to medium heat, stirring occasionally, until all the vegetables turn tender.
Once the vegetables are soft, remove the pot from the heat and use an immersion blender to create a smooth and creamy soup from the cooked vegetables. Blend until you achieve the desired consistency. If the soup is too thick, you can adjust it by adding a bit more stock or water and letting it simmer for a few minutes to achieve the desired texture.
Additional Notes:
While the pumpkin soup is delectable on its own, you can enhance the experience by serving it with slices of bread, cut into smaller pieces, and toasted in olive oil for added crunch.
