Creamy pumpkin risotto
Discover the secret to creating the creamiest pumpkin dish that will warm your heart on chilly autumn evenings and rainy days. My all-time favorite comfort food for this season has always been pumpkin risotto with chicken. Amid the various interpretations of this captivating dish, I'm sharing a straightforward recipe that you'll revisit every fall.
Here's what you'll need to make this delicious pumpkin-chicken risotto:
1 butternut squash
2 boneless, skinless chicken breasts
1 ½ cups of arborio rice
3 cups of chicken stock
A splash of white wine
1 onion
2 cloves of garlic
Salt, pepper, nutmeg, and sage to taste
1/2 cup of grated Parmesan cheese
Directions:
Start by preparing the vegetables - wash, clean, peel, and dice them as necessary. Cut the chicken breasts into bite-sized pieces.
Heat a pan over medium heat, add a drizzle of olive oil, and sauté the chicken until it achieves a golden brown hue.
Remove the chicken from the pan, set it aside, and let it rest while you continue with the recipe.
Place the pan back on the heat, add a bit more olive oil, and sauté the onion until it turns translucent. A pinch of salt can expedite the process. Once the onion is translucent, introduce the garlic and diced squash. Sauté until the squash softens and begins to disintegrate. Then, add the rice, your preferred seasonings, white wine, and chicken broth. When the rice is cooked to perfection, and the risotto adopts a captivating orange hue, reintroduce the chicken and sprinkle in the Parmesan cheese. Stir until the cheese melts, and your risotto is ready to be served.
Additional Notes:
This recipe is just as delightful without meat, making it perfect for a vegetarian version. Simply don't use the chicken.
Arborio rice is the ideal choice for making a velvety risotto, so I recommend adhering to the recipe without substituting it with any other type of rice.
