Coconut Cookies To Make This Valentine's Day

If you're one of those who like to express their love through food, welcome to the club! That's why I'm bringing you simple and delicious coconut cookies - perfect for sharing with your "someone special". Or you know... yourself. :)

A simple and delicious treat


Many treats around Valentine's Day you can buy or recipes you can make are vibrant pink or red colored. But if, like me, you prefer to steer clear of artificial colors in your food, you're in luck. For this recipe, I've opted for the natural elegance of white chocolate paired with toasted almonds. However, swapping white chocolate for pink is a simple solution if you want pink-colored cookies.


Here's what you'll need to make these delicious cookies:


  • 300 grams of all-purpose flour

  • 100 grams of coconut flour (not coconut flakes!)

  • 120 grams of sugar

  • 25 grams of vanilla sugar

  • 6 grams of baking powder

  • 160 grams of unsalted butter (cold)

  • 1 tbsp of coconut oil

  • 2 eggs

  • 90 of mililiters milk

  • 250-300 grams of white chocolate

  • 50 grams of chopped, blanched, and roasted almonds

Directions


  1. Combine all the dry ingredients in a mixing bowl until they're evenly blended.

  2. Add the remaining wet ingredients to the bowl and knead the dough until evenly combined.

  3. Lightly flour the work surface and roll out the dough to a thickness of approximately 4 millimeters.

  4. Use cookie cutters to cut the dough in the desired shape, I used heart-shaped ones.

  5. Arrange the cut-out cookies on a baking tray lined with parchment paper.

  6. Gather any remaining dough, knead it again, and repeat the cutting process until you've used all the dough to create heart-shaped cookies.

  7. Bake cookies for about 13 minutes at 180°C, adjusting the baking time as needed, depending on your oven.

  8. Be careful not to overbake the cookies, they should maintain a pale color when taking them out of the oven. If you let them bake until brownish color, they will be dry.

  9. Once cookies are baked, allow them to cool slightly at room temperature.

  10. In the meantime, melt the chocolate in the microwave and prepare almonds. I used store-bought blanched and chopped almonds. To add a bit of a crunch, I roasted almonds in a pan for a few minutes until golden brown.

  11. Dip one half of the cookie in the melted chocolate and sprinkle roasted almonds on top. Continue with all the cookies. Once you're done, leave them at room temperature until the chocolate cools down.

Additional notes:


Once cookies are cooled down, you can serve them or gift wrap them in a little bag or cookie box, you'll have a delicious homemade gift that shows you put in effort.
